pat some trout (or salmon or whitefish or whatever) filets dry with a paper towl oil, salt, and pepper the skin side put skin side down on baking tray spread with honey+dijon+mayonnaise mixture mound and press down panko + herbs (thyme is yummy) + chopped pecans + olive oil + salt & pepper mixture

bake @450 for ~12 minutes until internal temp is 145 degrees F
